Beef and Barley Stew in a Slow Cooker

3 lbs/ 1. 5 kg lean mince beef
2 tsp / 30 ml salt
¼ tsp / 1 ml pepper
2 tbsp / 30 ml vegetable oil
3 onions, peeled and chopped
1 cup chopped celery
1 cup regular barley
2 tbsp / 30 ml chilli powder
1 litre / quart tomato juice
1 cup water
Cooking steps
- Mix beef with salt and pepper.
- Heat the oil in a large heavy saucepot.
- Add the beef and onion, separating the meat into pieces; cook for about 5 minutes, stirring occasionally.
- Skim off any excess fat, if desired.
- Place the mixture into a slow cooker.
- Stir in celery, barley, chili powder, tomato juice, and water.
- Cover and cook on Low for 12-14 hours.
- Serve with crusty bread.
