Ground beef mince cooked with a mixture of beans and tomatoes.

Makes a generous 8 cups (2 litres).

Ingredients

  • 1 lb / 450 g lean beef mince

  • 19 oz / 540ml canned mixed beans, with liquid

  • 14 oz / 400 ml canned kidney beans, with liquid

  • 14 oz / 400 ml canned tomatoes, with juice, broken up

  • ½ cup / 125 ml finely chopped onion

  • 1 cup / 240 ml mild or medium salsa

  • 2/3 cup / 150 ml uncooked long grain rice

  • 1 tsp / 5ml salt

  • ¼ tsp / 1ml pepper

  • ¼ tsp / 1 ml garlic powder

  • 1 cup / 250 ml water

Cooking steps

  • Fry beef mince in a non-stick frying pan.
  • Drain well.
  • Transfer to a 3.5 litre (3 ½ quart) slow cooker.
  • Add the remaining 10 ingredients and stir.
  • Cover and cook on Low for 8-9 hours or on High for 4-4.5 hours.
