Beef Pot Roast with Vegetables in a Slow Cooker

2 – 3 potatoes, sliced
2 – 3 carrots, sliced
1 – 2 onions, sliced
1 beef chuck under blade pot roast (about 4 pounds/ 1.8 kg)
salt and pepper
½ cup water or beef stock
Cooking steps
- Sear the meat in a large skillet or frying pan.
- Insert several steel prongs into the meat.
- Place the vegetables into a slow cooker.
- Season the seared meat with salt and pepper.
- Put the meat into the slow cooker.
- Add water.
- Cover and cook on Low for 8-10 hours, or until the meat is tender.
