Beef Pot Roast with Vegetables in a Slow Cooker

An easy to prepare slow cooker recipe for those in a hurry which uses a pot roast.

Ingredients

  • 2 – 3 potatoes, sliced

  • 2 – 3 carrots, sliced

  • 1 – 2 onions, sliced

  • 1 beef chuck under blade pot roast (about 4 pounds/ 1.8 kg)

  • salt and pepper

  • ½ cup water or beef stock

Cooking steps

  • Sear the meat in a large skillet or frying pan.
  • Insert several steel prongs into the meat.
  • Place the vegetables into a slow cooker.
  • Season the seared meat with salt and pepper.
  • Put the meat into the slow cooker.
  • Add water.
  • Cover and cook on Low for 8-10 hours, or until the meat is tender.
