Corned Beef Dinner in a Slow Cooker

Corned beef, potatoes, carrots, onions, cabbage and spices cooked in a slow cooker. A great recipe for the family.

Top tip: This corned beef dinner is great served with a white sauce poured over the top!

Corned Beef Dinner in a Slow Cooker

Ingredients

  • Initial ingredients
  • 1 x 3 1/3 lbs / 1.5 kg corned beef

  • 2 cups boiling water

  • 2 whole cloves

  • 1 tbsp / 15 ml brown sugar

  • 1 bay leaf

  • ¼ tsp / 1ml pepper

  • Remaining ingredients
  • 4 medium potatoes, peeled and cut into chunks

  • 5 medium carrots, cut into chunks

  • 2 medium onions, diced

  • 1 small cabbage cut into approx 8 wedges

Cooking steps

  • Stir the first 5 ingredients together in a bowl.
  • Pour the liquid mixture into a 6 Litre slow cooker, then add the corned beef.
  • Add the remaining 4 ingredients.
  • Cover.
  • Cook on Low for 10 to 12 hours or on High for 5 – 6 hours.
  • Discard bay leaf before serving.
