Hamburger Casserole in a Slow Cooker

A tasty hamburger casserole recipe cooked slowly in a crock pot allows time for a rich complex mixture of flavours to develop.

Makes 8 cups.

Ingredients

  • 1 ½ lbs / 700 g lean beef mince

  • Base ingredients
  • 3 medium potatoes, cubed

  • 1 medium onion, thinly diced

  • 3 medium carrots, thinly sliced

  • 1 celery stalk, thinly diced

  • 10 oz / 300 g frozen peas

  • 1 tsp / 5 ml salt

  • ¼ tsp / 1 ml pepper

  • Sauce ingredients
  • 10 oz / 280 ml tomato soup

  • 2 tsp / 10 ml beef stock powder

  • ½ cup / 125 ml water

Cooking steps

  • Fry the beef mince in frying pan until browned.
  • Drain off the beef well, then add to a 3.5 L ( 3 ½ quart) slow cooker.
  • Add the 7 “Base ingredients” to the slow cooker, then stir.
  • Mix the soup, stock powder, and water (Sauce ingredients) in a bowl, then add to the slow cooker.
  • Stir then cover.
  • Cook on Low for 8 – 10 hours or on High for 4 – 5 hours.
