Did you know oatmeal is a fantastic source of complex carbohydrates and slow-burn energy (a bit like your ex-bloke)?

Out of all the grains, oatmeal is rated as one of the healthiest, so why not make your bread out of it?

Just add raisins… because you know they taste great!!

My Oatmeal & Raisin Bread recipe combines oats, raisins, chopped nuts, and buttermilk to create a bread which is full of flavour and nutrition.

Oatmeal & Raisin Bread in a Slow Cooker

Ingredients

  • 2 cups plain flour

  • ½ cup sugar

  • 1 tbsp baking powder

  • 1 ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp baking soda

  • ¼ tsp nutmeg

  • 1 cup uncooked oats

  • 1 cup / 5 oz raisins

  • ½ cup / 2 oz chopped nuts

  • 1 ¼ cups sour milk or butter milk

  • ¼ cup firmly packed brown sugar

  • 1 egg, well beaten

  • 3 tbsp shortening, melted and cooled

Cooking steps

  • Mix flour with sugar, baking powder, cinnamon, salt, baking soda and nutmeg.
  • Stir in oats, raisins, and nuts. Make a well in the centre and set aside.
  • Mix sour milk, brown sugar, egg and melted shortening.
  • Add to dry ingredients all at one time; stir only enough to moisten dry ingredients.
  • Turn into a well-greased and floured slow cooker bake pan or 2 pound coffee can.
  • Cover bake pan with lid; or if using coffee can, cover with 6 layers of paper toweling.
  • Set in an slow cooker. Cover and cook on High 2-3 hours.
  • Remove bake pan and let cool 10 minutes before removing bread.
