Sweet and Sour Pork in a Slow Cooker

2 ½ lbs / 1.1 kg lean pork cut into cubes
1 tbs soy sauce
½ cup white vinegar
1 cup brown sugar
1 ¼ cups water
1/3 cup water extra
¼ cup corn flour
Cooking steps
- Place the pork in the slow cooker
- Mix the brown sugar and the 1 ¼ cups of water into a bowl, then add the vinegar and soy sauce
- Stir and pour the sauce over the pork
- Put the lid on the slow cooker and cook on Low for approximately 8-10 hours
- Switch to High for 4-5 hours
- Remove any fat which has accumulated during cooking
- Stir second quantity of water and corn flour together in a small bowl, then add to the slow cooker
- Cook on High for 15 to 20 more minutes to thicken
- Serve with rice
